Lets start with The basics. The higher the quality the tools the longer they will last and makes cutting easier with less stress on hands and joints. But any Scissors will work. Leather scissors work best of course. Then you will also need leather needles and a hole punch. Since the hole punch can only punch holes on the perimeter, you can also invest in a mallet and hand punch with punching board.
The essential and ever so ending choices of leather colors and thickness takes a bit of sourcing. Don't forget you can find old leather articles to cut and upcycle. for hides I recommend Ebay. Sellers like leathertreasureshopusa or Kdbird and Distant drums for deer hides
